Zijn restaurant Pulcinos aan de Piushaven draait als een tierelier en iets verderop opent het ‘kuikentje’ wijnbar Satiata. Wat drijft hem? En waarom? „Het is slopend én stressvol, maar ‘s avonds kapot thuiskomen is geweldig.”
